Healthy choppy beef

This choppy beef recipe is extremely healthy as it contains some nicely fine chopped veggies. And when you feel like taking a day off from cooking, this recipe is a must! So, go ahead, try this very basic minced beef.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 1 stick celery, finely chopped
  • 1 red capsicum, without the seeds, finely diced
  • 1 green capsicum, without the seeds, finely diced
  • 1kg lean beef mince
  • 400g can chopped Italian tomatoes

Method:
Take frying pan. Heat it well. When it is heated well enough, add olive oil. Let the oil warm on a medium flame. Once you get the feeling that the oil is warm enough, start adding the finely chopped onions, celery along with the red and green capsicum. Cook it on a low flame until they get all soft. Make sure that you keep on stirring in between. Once the veggies are cooked, add the chopped beef into the pan.

Use the spoon to break the lumps of the beef. Stir it occasionally. Let it stay on a medium flame for about 10 minutes or until you see it getting brown. Once the beef is brown, add the diced tomatoes with some salt to taste. Do not forget to add a dash of pepper in it.

Let this mixture boil. Once you start bubbles coming, lower the flame. Simmer it for about 15 minutes. Let it thicken the way you like. Once it is made, let it cool. Once it it fully cooled down, freeze it. This chopped beef will last for about 3 long months if it is stored in a right container.
The above recipe serves 8 cups of minced beef and hardly takes 30 minutes.
