Healthy chicken noodle salad

Kids are not very fond of salads. But you add something tasty and yummy in it, they will hog on it. Add some chicken and noodles in the salad and I’m sure that your wee devils will grab a bite of this healthy salad.

Ingredients:

  • 450g fresh noodles
  • 1 carrot
  • 1 Lebanese cucumber
  • 1 red capsicum, thinly sliced
  • 1 1/2 cups shredded cooked chicken
  • 1/4 cup chopped fresh coriander
  • 2 tablespoons salt-reduced soy sauce
  • 2 tablespoons sweet chili sauce

Method:
Take a pot. Add some water to it. When the water comes to boil, throw in the noodles. Let the noodles boil wholly in the water. Once the noodles get well boiled, drain off the water. Take a bowl and then add the sliced carrots and Lebanese cucumber. Also add the warm noodles along with the red capsicum and chicken. Spray the soy sauce and chili sauce. Mix it all well. And serve. This salad can go for two days in the refrigerator. But just make sure that you finish it as soon it is made. You do not want to deteriorate the nutritive value of the salad.

With these measurements, the salad serves 4 people. Also this salad is good diet for people who want to shed some pounds.
