Jumbo sushi roll eatery Buredo is coming to Dupont Circle with an expanded menu, more space, and later hours.
Borderstan previously reported the restaurant was mulling over a second location at 1213 Connecticut Ave. NW. But now it's official: Owners Mike Haddad and Travis Elton have signed a lease for the former Pinkberry space. The restaurant is targeted to open by late spring.
With 1,000-square-feet more than the Franklin Square shop, the Dupont locale will not only have more seating, but more room for the kitchen and prep area. That means Haddad and Elton will be able to add some new rolls as well as other offerings like ceviche and poke bowls. They're still experimenting with specific recipes.
The owners also want to do more collaborations with other restaurants or food businesses. For example, they recently partnered with Jrink on a vegan roll that incorporates apple-broccoli-broccoli leaf pulp leftover from the company's cold-pressed juices.
Given the clubs and bars in the neighborhood, the Dupont Buredo plans to extend its hours to cater to the late night crowd. The restaurant could potentially end up being open as late as 3 or 4 a.m.
