Spinach Carrot Rice

Kids hate it and Popeye loves it. Kispinach-carrot-riceds have a love and hate relationship with it. Yes, it is the green leafy spinach. Spinach is immensely rich in iron and carrots in vitamin C. As we know, iron is essential in the formation of cell and vitamin C is essential for a good eye sight. This could be a very good lunch meal not only for the kids, but for the whole family. With some noodles and pasta, the kids will love the so longed hated spinach.

Ingredients:

·        2 cups cooked rice

·        1/2 teaspoon cumin seeds

·        1/2 cup chopped onions

·        1/2 cup grated carrot

·        1 cup chopped spinach

·        1 vegetarian seasoning cubes

·        2 tablespoon butter

·        Salt to taste

·        Black pepper powder to taste

 

Method to prepare:

Take a pan. Heat it up. Add butter to it once the pan is well heated. As the butter melts, add the cumin seeds immediately. Once the cumin seeds starts cracking up add the sliced onions and stir them continuously. Stir them for 3 minutes at the most. Latter add carrots, spinach and stir them all together for 2 minutes. Once you get the feeling that the onions are getting well fried, throw in the cooked rice. Also add seasoning cubes, salt, pepper and mix them all well. Cook this mixture for about 5-7 minutes on a low flame until the moisture evaporates.  Serve it when hot. For additional, garnish it with finely chopped coriander.

Easy to make and ready in 15-20 minutes. This recipe serves 4 people. The white coloured rice with the coloured orange and contrasting green are a treat for the eye as well as to the mouth.

Tip Alert: ½ cup uncooked rice makes approximately 2 cups cooked rice
