Ingredients:
- 2 tablespoons olive oil
- 4 (6-ounce) chicken breast halves
- 4 chicken thighs (about 1 pound)
- 4 chicken drumsticks (about1 pound)
- 2 cups chopped onion
- 4 garlic cloves, minced
- 1 cup chopped celery
- 1/2 cup chopped fresh basil
- 1/2 cup chopped fresh flat-leaf parsley
- 1/2 cup red wine vinegar
- 1/4 cup sliced green olives
- 1/4 cup capers
- 1 tablespoon sugar
- Dash of ground red pepper
- 2 bay leaves
- 1 (28-ounce) can Italian-style tomatoes, undrained and chopped
- 8 cups hot cooked macaroni
- Parsley sprigs (optional)
Method:
Take frying pan. Heat it for a minute and then add a big tablespoon of oil. Once the oil starts to heat up, slowly place the chicken breast halves in the oil pan. Keep it like that for about two minutes or wait until the side turns brown. The moment they turn brown, take them out. Do not turn off the flame. Add another tablespoon of oil in the same pan and then throw in the remaining chicken pieces. Do the same with them. Once they are done, take them out from the pan.
