Grab a big crunchy bite of white chocolate cookies


Who doesn’t love cookies? This white chocolate with cranberry cookie recipe is exclusively for all the cookie lovers. And the best part about this recipe is that you do not have to follow the same ingredients rather you could simply start pouring in whatever ingredients you get in your kitchen cabinet. And you can anytime start improvising with this cookie recipe.

Ingredients:
225g of butter
1 teaspoon of vanilla extract
160g of caster sugar
120g of light brown sugar
2 large free range eggs
1 teaspoon of bicarbonate of soda
190g of plain flour
240g of rolled oats
80g of dried cranberries
100g of good quality white chocolate chips

Method:
Preheat the oven to 180 degree Celsius and line in two large baking sheets with parchment paper. Start creaming the sugar and the butter until you start seeing a nice pale and smooth texture coming. You could do so by using a hand mixer. Start adding the egg one by one. Mix the egg one by one and this will avoid the split. Now with the help of a spatula start folding in the oats, cranberries, some vanilla extract and chocolate chips. Now add nice big 12 tablespoon of dough on each of the baking sheets and then place it in the oven to bake say for about 15 minutes or when you see it turning golden brown.

Just make sure that you keep on changing its side so that they even turn golden brown on both the sides. Then take it from the oven and let it cool before you shift it to wire wrack to cool. And then enjoy it with a nice glass of milk.
