The Irish honey cookie


These cookies are something that is made in every Irish house. This recipe is passed on from generation to generations. And the best part of this recipe is that it is made with the lots of yummy Irish honey. However, there is some improvisation in this recipe but yet it tastes like the traditional Irish honey cookie.

Ingredients:
100 g white flour
2 level teaspoons baking powder
pinch salt
100 g wholemeal flour
3 tablespoons butter
1 heaped tablespoon brown sugar
1 generous tablespoon honey
150 ml milk

Method:
Take bowl and start adding the white flour, some baking powder and salt. Then slowly add the wholemeal flour and pour in some butter. Take another bowl and make a mixture of milk, honey and sugar and keep it stirring until all of this dissolved. Once that is done, add this milk honey mixture in the previous flour bowl mixture. And turn it into a soft dough. Once the dough is nice soft and smooth, start turning it into round balls of about 20 cm and place them on a greased baking sheet. Before placing them in, take a fork and cut across the dough a couple of times and set it to bake at 200-400 degree Celsius. This should take about 20-25 minutes. See that they turn out nice light brown. Let them cool and eat!
