Stuffings: Roasted shredded lamb, fried egg, jalapeño chimichurri

Thickness: 4.5 inches

Pros: The toasted biscuit is fluffy on the inside, with a nice, crumbly crust. For a dose of heat and acidity, the pucker-inducing jalapeño sauce saturates the contents and fights the richness of the heavy egg-and-meat combination.

Cons: On its own, the lamb tastes ever so slightly gamey and dry. And while putting an egg on top of a dish seems to be all the rage right now, in this sandwich, it adds a stomach-kicking richness that may leave you in a food coma.

Sloppiness level (1 to 5): 4. The biscuit is large enough to contain all the ingredients when the sandwich is first served. But as you eat, it starts to break apart, and the sauces begin to drip all over your hands. Keep a fork and plenty of napkins handy.

Overall score (1 to 5): 4. Though the sandwich’s structural integrity suffers once you dig in and its drippings leave your hands sticky with sauce and egg yolk, the bright flavors and buttery biscuit compensate for the mess. Expect dirty hands but a full tummy.
