The texture of the cookie is flaky enough to support the density of the chocolate bar.

Place two Speculoos cookies on a plate.

Face the cookies design-side down. Some of the cookies may be cracked in the package, but this matters not. You can use the broken pieces later, to sop up the remaining ice cream.
